CHEF DAN'S SEARED SESAME TUNA:

INGREDIENTS:
Sauce:
2 tablespoons ginger
6 cloves garlic
1 cup brewed or low sodium soy sauce
1/8 cup sesame oil
2 tablespoons rice wine vinegar
2 tablespoons lime juice
2 tablespoons honey
hot pepper sauce to taste
1/4 cup sweet pepper chili sauce
1 bunch fresh cilantro, chopped

OTHER INGREDIENTS:
sushi grade ahi or yellowfin tuna steaks
tube of wasabi paste
white and black sesame seeds
peanut oil for searing

DIRECTIONS:
1. Spread wasabi paste over tuna.
2. Coat in sesame seeds.
3. Sear in hot pan with peanut oil until sesame seeds are toasted but tuna is still rare.
4. Drizzle sauce over tuna.
5. Serve with seaweed salad.
